I have dabbled with HRM for running and cycling but i think that(without sounding like a Hippie) just listening to your body is the best option.

I have three speeds:
Easy - 4hrs + on the bike (basemiles)
Brisk - 2hrs (20 mins before and after easy)
Eyeballs out - Time trials or racing
